A white starch extracted from the rhizomes of several tropical plants. Arrow root is most commonly used in place of cornflour to thicken different dishes, but is also popular in grain-free baking as the naturally gluten free starch can add texture and structure to grain-free baked goods. It’s also completely flavourless which makes it a great option as an addition to many recipes.
