Raw honey is honey kept as close as possible to how it left the hive. It is not pasteurised or finely filtered, so it keeps its natural pollen, enzymes and the full flavour of the flowers the bees fed on. Every honey in this collection is raw and unblended, from single flower varieties to rich forest honeys, and many are rare finds you will not see in a supermarket.

Wild About Honey works with small beekeepers to bottle distinctive single origin raw honeys, such as orange blossom, chestnut and Kalymnos thyme. Mellona raw honey comes from Cyprus, plain or infused with ingredients like cinnamon and ginger. Runny or set?
Raw honey naturally sets, or crystallises, over time, and some varieties set within weeks. This is a sign the honey has not been heavily processed, not that it has gone off. If you prefer it runny, stand the jar in warm water and stir gently. Avoid overheating, as high temperatures change the flavour.
How to enjoy raw honey
Stir it into warm, not boiling, drinks, drizzle it over yoghurt and porridge, spread it on toast or pair darker honeys with cheese. Because its flavour is delicate, raw honey is at its best uncooked.
